Our team specialises in building reputable brands throughout the world. In Scandinavia, a region with over 26 million people and a GDP of $1.1B, we created a successful brand consisting of 18 restaurants with four distinctly different concepts. We have plans for continued expansion.
After implementing new branding, each of the restaurants saw increased revenue, some locations by as much as 400 %. The rebranding also improved the profile of hotels associated with the restaurants. One example of this was Clarion Hotels being awarded Hotel Chain of the Year in Scandinavia due in part to the restaurant’s enhancements.
As part of the branding process, we standardised recipes and procedures to improve quality and reduce costs without losing local flavour. We also standardised all service procedures to improve the service standard and overall efficiency of the restaurants. These changes led to improved staff performance in back and front of house.
In addition, we insured that our changes will continue to positively impact the future of not only these restaurants, but also the local economy. We achieved this by implementing a thorough sustainability programme across all of the restaurants and developing local talent that can be deployed when necessary.
Our team invested in the future of the culinary arts by partnering with a premier NYC Culinary School to support the best and brightest students entering the Food and Beverage industry. We expanded the school’s programme offering from 12 courses to more than 80. We also assisted with the creation of a new branch, the Italian Culinary School. In addition, we designed and implemented a culinary programme and a restaurant management programme for Failte Ireland, the National Tourism Development Authority for the country.
To build the student’s real world experience and increase revenue for the school, we started an Events and Catering arm. We also produced several cookbooks including one that won a James Beard Award.
We then focused on fine-tuning the school restaurant’s image, service and offerings. These improvements resulted in it receiving a Bib Gourmand in the Guide Michelin.
All of these improvements bolstered the profile of the school within the industry which led to increased positive media attention and offers to present at and attend numerous symposiums and events. Attending these events expanded the goodwill perception of the school and its students within the community and the industry as a whole.
Our team helps realise unique food and beverage concepts for our clients. We created a beach bar and lounge for a client in South East Asia that complemented the surrounding picturesque views and local flavours. We managed the process from idea conception to opening day. The beach bar and lounge was integrated with an already established restaurant.
Our business planning services helped determine the optimal strategy for the new asset. Our services included menu curation and planning for the first year of operation and design of a beverage programme that featured custom cocktails, unique to the location.
In addition, we drafted a Sales and Marketing strategy to promote the new offerings to the community.
We ensured that the location was staffed by the highest quality professionals by participating in the recruitment process including the hiring of the Executive Chef and management team.
Finally, we added a finishing touch by overseeing the entertainment offerings and creating a music strategy that set the proper ambiance for the location.
Our team proudly infuses local flavour and culture into the concepts we create. We know that a food and beverage experience is about more than just what someone chooses to eat and drink. We created a Middle Eastern cafe concept for one of our clients with that philosophy in mind.
The concept was both contemporary and international. We stayed true to the Middle Eastern culture while bringing in hints of Scandic style with pastries, breads, and meal structure choices.
We developed an overall branding and Marketing plan and offered our creative support throughout the build-out. We added an unique family style Friday brunch concept that was alcohol-free, which is unusual for the region. This fresh offering was a hit with both new customers and loyal patrons.

We provided this service of general business advisory for a well-known Chef who was looking to improve the performance of his Country Manor House award-winning restaurant. In addition, the asset included a hospitality element with a number of guest rooms available.
We advised on overall strategy, finding areas that needed improvement and suggesting both quick fixes and long-term solutions. We presented ideas for Marketing and growth opportunities including brand partnerships with other prominent players in the industry.
In addition, we provided financial advisement including capital funding and investment strategies. We compiled associated investor presentations for review which culminated in the creation of a successful corporate investor relationship.
